Step 1: Prepare the crust

In a food processor or blender, mix together 1 cup of almond flour, 1/2 cup of oat flour, 1/2 cup of white rice flour, 1/4 cup of tapioca starch, and a pinch of vanilla salt. – Dairy-Free: The beauty of this recipe is that it’s already dairy-free! So no need to make any changes there.

– Pumpkin Pie Bars: Swap out the pecans for pumpkin puree, add in some pumpkin pie spice (cinnamon, nutmeg, cloves), and voila! You’ve got delightful pumpkin pie bars.

– Chocolate Pecan Bars: If you’re a chocolate lover, mix in some dark chocolate chips with the pecan mixture before pouring it into the crust. You can also drizzle melted chocolate on top once it’s finished baking.

– Gluten-Free Vegan Pie Crust: To make a gluten-free vegan pie crust, grind 1 cup of gluten-free oats in a food processor until it resembles flour. Add in 1 cup of almond flour, ¾ cup of tapioca starch and ¼ teaspoon of salt. Mix well then add in ½ cup melted organic coconut oil or vegan butter substitute and 1 tablespoon maple syrup. Mix again until a dough forms then press into a pie dish and pre-bake in oven for about 10 minutes before adding in filling.

Pulling out a perfectly baked pie from the oven is one of life’s greatest pleasures, and this gluten-free blender pecan pie recipe is no exception. But, just like with any other recipe, there are some tips you could use to ensure that your pecan pie comes out perfect every single time.

First things first, if you’re using a ready-made pie crust, always make sure that it’s thawed before filling it. This will help prevent it from cracking when you pour in the filling.

When blending your ingredients together using a blender or food processor, make sure to start on low speed and gradually increase it as needed. This will help create a smooth mixture and avoid any unsightly chunks of nuts or oats.

While baking, keep an eye on the edges of your pie crust so that they don’t burn. If necessary, cover them with tin foil to protect them from excessive heat.

Additionally, once the pie is done baking, allow it to cool for at least thirty minutes before cutting into it. This will help firm up the filling and make it easier to slice.

If you’re still unsure about when your pecan pie is ready to be pulled out of the oven, just give the pie tin a gentle shake. The center should be slightly wobbly but set around the edges.

By following these tips, you can ensure that your gluten-free blender pecan pie turns out perfect every single time – crispy crust, gooey filling and all!

Gluten Free Blender Pecan Pie

Gluten Free Blender Pecan Pie Recipe

This dish is literally child’s play – homage to the basics: simple, fun, healthy and happy. It really is the embodiment of blend and live. Just throw everything in your blender and puree until smooth. It takes less than 5 minutes. How easy is that? More importantly, it is absolutely delicious; and dare I say it, downright impressive. This pie has been a staple treat in my family for about 30 years. Mom found this recipe in an old Southern cookbook at a second hand book store on a trip to New Orleans back in the 80’s and we have been chowing down with joy ever since! The cookbook is long gone, but the memories still remain. Over the years mom and I have experimented and adapted this recipe using natural sweeteners, dairy-free milks and gluten-free flours. For those of you not on a restricted diet, feel free to use regular cow’s milk, wheat flour and sugar. However, I can honestly say that it tastes better this way, and we all know it is more healthy.
