Substitutions and Variations

As a baker, I understand that sometimes you may not have all the ingredients at hand, or someone in your family has food allergies. Below are some substitutions and variations you can make with this recipe:

– Almond flour: If you don’t have almond flour or prefer a different flavor, you can use an equal amount of any other nut flour, such as hazelnut or pecan, or sub it for regular all-purpose flour.

– Pink coloring: To achieve the pretty pink color, we used pink sugar. However, if you don’t have it at hand or want to avoid food coloring, you can skip it altogether or add a touch of beet juice for a natural and subdued pink hue.

– Dairy-free: If you want to make this recipe dairy-free, substitute the butter for a vegan butter alternative and the half-and-half for any non-dairy milk such as coconut or almond milk.

– Sugar cookies copycat recipe: These cookies resemble the famous Lofthouse sugar cookies. To achieve that soft and cake-like texture, add one tablespoon of sour cream along with the wet ingredients.

– Big pink cookie: If you’d like to make this recipe into one big cookie rather than individual ones, just lightly press the dough into a large circle on a baking sheet and bake until done.

– Sandwich cookies: You can easily turn these pretty pink sweeties into sandwich cookies by frosting them with almond frosting or any other flavor of your preference. Mix 1/2 cup of powdered sugar with 1/2 teaspoon almond extract and enough heavy cream to get your desired consistency.

No matter what substitution or variation you choose, be sure to pay attention to your dry-to-wet ratios as altering the recipe too much may result in a different outcome. However, these decision points are what makes baking so exciting – creativity is highly encouraged!

Make-Ahead, Storing and Reheating

Trust me, your taste buds won't know what hit them when you bite into one of these soft and flavorful bites.
Trust me, your taste buds won’t know what hit them when you bite into one of these soft and flavorful bites.

Once you’ve baked these cute little pink sweeties, you’ll definitely want to enjoy them for days. Good news, they can be made ahead and stored in different ways.

To make ahead of time, you can prepare the cookie dough, shape them into balls and store them in a sealed plastic bag in the freezer. When ready to bake, remove from the freezer and let sit at room temperature until softened. Then roll them in pink sugar and bake as instructed.

To store afterward, place the cooled cookies in an airtight container lined with parchment paper to prevent sticking. Keep the container at room temperature for up to five days or store in the fridge for longer freshness.

If you know you will be storing them for longer than five days, freeze the cookies in a resealable freezer bag. They can last for up to three months frozen.

When reheating cookies that may have lost their softness or chewiness, simply place them on a baking sheet lined with parchment paper and heat at 350F for about 5 minutes or until they reach the desired texture.

Remember not to stack them if warm since they will become tender on top which could lead to breakage when cooled.

With these storing tips-whether it’s after baking, freezing or reheating- you can always ensure that your pink sweeties stay fresh as ever!

Tips for Perfect Results

If you’re looking for the perfect Pink Sweeties, it all comes down to technique. Here are some helpful tips to ensure your cookies come out beautifully every time.

Firstly, make sure you cream the butter and sugar for at least three minutes until pale, fluffy and lighter in color. This step is crucial when it comes to creating a tender and light cookie.

Next, it’s essential to measure your flour correctly. Too much flour can result in cookies that are dry and crumbly rather than tender and melt-in-your-mouth. Use a spoon to scoop the flour into the measuring cup and then level it off with a knife.

When you’re mixing your ingredients together, scrape the sides of the bowl frequently to ensure everything is incorporated evenly. Otherwise, you may end up with pockets of dry ingredients in your dough.

When using cookie cutters, dip them into flour every few cuts to help prevent sticking. If your dough gets too warm or sticky, just pop it into the fridge for 10-15 minutes before continuing with your cookie cutting.

To achieve that pretty pink color without using artificial food coloring, try crushing freeze-dried raspberries or strawberries into a fine powder and adding it to your dough. You can also dust the tops of your cookies with a bit of pink sanding sugar before baking for an extra festive touch.

Lastly, if you want ultra-tender cookies with a delicate crumb, try replacing some of the all-purpose flour with almond flour. Not only will this give your cookies an irresistible nutty flavor but it will also make them super soft and tender.

Follow these tips and you’ll have perfect Pink Sweeties every time – tender, melt-in-your-mouth deliciousness that’s perfect for Valentine’s Day or any occasion!

Pink Sweeties (Pretty Pink Almond Cookies) Recipe

These pretty, pink and white swirled, iced almond cookies came from the Woodbine Cottage in Granbury, TX (via my friend, Victoria!). They have a nice almond flavor, they keep well, and they look so pretty! I think they'd be nice for a baby shower, or for Valentine's Day, because of their pink color. (Note: I find this dough to be rather stiff, and recommend using a heavy-duty mixer.)
