Ingredient List

Here’s what you’ll need:
– 1 Pillsbury pie crust
– 2 cans of peach slices (28 oz each)
– 1 cup of sugar
– 3 tablespoons of cornstarch
– 1/2 teaspoon of pumpkin pie spice
– 2 tablespoons of light corn syrup
– 1 teaspoon of vanilla extract
– 1 block of cream cheese, room temperature
– 1/4 cup of butter, unsalted, room temperature
– 1/4 cup of shortening
– Pinch of salt
– 2 eggs
– 1 tablespoon of lemon juice
– 1 tablespoon of flour
– 1/2 cup of sour cream

Pro-tip: Make sure all ingredients are at room temperature for optimal results.

Step-by-step instructions
Step One: Preheat the oven to 425 degrees.

Remove the pie crust from the packaging and let it sit out so it can come to room temperature.

Step Two: Prepare the peach mixture.

Drain the cans of peach slices, reserving the syrup from one. Combine syrup from one can with sugar, cornstarch, pumpkin pie spice, and light corn syrup in a large saucepan over medium heat. Stir until mixture comes to a boil and thickens. Remove from heat and add peach slices. Stir gently to coat peaches in the sauce.

Step Three: Make the peacheesy filling.

In a separate mixing bowl, beat cream cheese until smooth. Add butter and shortening and continue beating until smooth again. Add sugar gradually and continue lightly beating. Once combined, stir in salt, eggs one at a time, lemon juice, flour & sour cream. Mix well.

Step Four: Assemble the pie.

Pour peach mixture into Pillsbury crust and spread evenly. Spoon peacheesy filling over top.

Step Five: Bake for approximately 30 minutes

Place pie on lowest rack in oven (not touching any side) and bake for approximately 30 minutes or until filling is set but remains slightly jiggly in the center when shaken.

Step Six: Time to cool down!

Once removed from oven give it a few hours to cool before slicing into it.

Enjoy your freshly baked Peacheesy Pie with your loved ones!

Pro-tip: Serve it with whipped cream or ice cream on top if desired!

One bite of this Peacheesy Pie and you’ll never want to go back to regular peach pie again.

When it comes to making a recipe your own, substitutions and variations are key. Here are some ideas to change up this recipe and make it your own:

1. Crust: While this recipe calls for a Pillsbury pie crust, you can use any store-bought or homemade crust. A pastry crust would be ideal for a more traditional pie, while a graham cracker crust would give it a more dessert-like feel.

2. Fruit: If peaches aren’t your thing, this recipe is easily adaptable to other fruits such as apples, pears or berries. Just adjust the sugar level depending on how sweet the fruit is.

3. Cheese: This recipe uses cream cheese to give the filling a tartness that complements the sweetness of the peaches. However, you can swap out the cream cheese for mascarpone or ricotta cheese for a different flavor profile.

4. Spice: If you don’t have pumpkin pie spice on hand, you can create your own by mixing together cinnamon, nutmeg, ginger and allspice in equal parts.

5. Sugar substitutes: For those looking for healthier options or with dietary restrictions, you can substitute the sugar in this recipe with alternatives such as honey or stevia.

6. Toppings: Add toppings such as whipped cream, caramel sauce, or chopped nuts to take this dessert to another level.

Remember that every substitution can offer a unique experience and texture combination. So feel free to experiment with different ingredient combinations until you find what suits your personal preferences best.

The flaky crust and creamy filling make this Peacheesy Pie a crowd-pleasing dessert.

Now that your peacheesy pie is fresh out of the oven, let’s talk about how to serve and pair it.

Firstly, I recommend letting the pie cool for approximately 30 minutes before serving. This allows the filling to settle and set, resulting in a perfectly sliced pie. You can serve peacheesy pie at room temperature or warm it up slightly in the microwave or oven before serving.

As for pairing, peacheesy pie is an excellent dessert on its own, no accompaniments necessary. However, a dollop of whipped cream or a scoop of vanilla ice cream never hurt anybody. They complement the creamy and tangy flavors of the peacheesy filling perfectly.

If you want to take things up a notch, you can also pair this pie with a glass of sparkly champagne or prosecco. The bubbles help cut through the richness of the filling and complement the sweetness of the peaches.

Overall, this peacheesy pie recipe deserves to be front and center at any dessert table. With its tangy and sweet filling and flaky crust, it’s sure to become a crowd-pleaser. So go ahead and pair it with your favorite drink or enjoy it on its own – either way, you won’t regret it!

Now that you have mastered the art of making the delicious Peacheesy Pie, let’s talk about how to store and reheat it. One of the best things about this recipe is that it is easy to make ahead and store for later. You can also make it in advance for a special occasion or gathering.

To make ahead, follow the entire recipe up to the point of baking. Once you have assembled the Peacheesy Pie, cover it with plastic wrap and place it in the refrigerator until you are ready to bake it. You can keep it in the fridge for up to two days.

To store leftover Peacheesy Pie, wrap it tightly with plastic wrap or aluminum foil and place it in the refrigerator. It will stay fresh for up to three days.

When reheating the Peacheesy Pie, preheat your oven to 350 degrees F (177 degrees C). Remove the plastic wrap or aluminum foil from the pie and bake for 10-15 minutes or until heated through.

For best results, do not reheat in the microwave as this may result in a soggy crust. The oven method is recommended as it will help retain the crisp texture of the crust while ensuring that the filling is warm and gooey.

If you have a large family or are hosting a big event, you can easily double or triple this recipe and store any leftovers in separate containers. This will ensure that you have enough Peacheesy Pie to serve as a delicious dessert throughout the week.

With these tips on storing, reheating, and making ahead, you can enjoy this delectable dessert any time and anywhere without having to worry about preparation time.

Tips for Perfect Results

If you love peaches and you love cheese, you won't be able to resist
If you love peaches and you love cheese, you won’t be able to resist

When it comes to baking a Peacheesy Pie, there are a few tips and tricks that can elevate the taste and texture of your pie. Follow these tips to get the perfect results every time.

Firstly, use a combination of butter and shortening in making your crust. The butter adds flavor, while the shortening tenderizes the crust. Using only one or the other may result in a tougher crust.

Secondly, don’t overwork the dough when making the crust. Overworking can cause gluten formation, leading to a tough crust instead of a flaky one. You can use a food processor, pastry blender or even your hands to mix the dough until it just comes together.

Thirdly, brush the bottom of the pie crust with egg whites before adding the fillings to keep it from getting soggy. This is especially important when using wet ingredients like peaches.

Fourthly, don’t overmix the filling ingredients once you’ve combined them together. Overmixing leads to extra air pockets in your filling which results in an uneven texture once baked. Mix just until everything is combined.

Fifthly, let your cream cheese come to room temperature before mixing it with the other filling ingredients. Cold cream cheese will not mix smoothly which could result in lumps forming in your pie filling.

Sixthly, place a baking sheet underneath your pie dish to catch any spills that may occur while baking. This prevents any messes from happening inside your oven.

Lastly, after baking, let your Peacheesy pie cool for at least an hour before slicing. Cooling allows all liquids in the filling to set and makes slicing much easier without tearing apart the pie.

By following these tips for perfect results, you’re sure to bake an amazing Peacheesy Pie every time!
