Gather Your Ingredients

Before diving into baking, make sure you have all of the ingredients listed below. Don’t forget to preheat your oven to 350°F (177°C)!

The Ingredients

  • 2 and 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 cup unsalted butter, room temperature
  • 1 and 1/2 cups granulated sugar
  • 1 large egg
  • 1/3 cup dark molasses
  • 1 and 1/2 cups chopped crystallized ginger or candied ginger

The Dough

  1. To begin, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves in a bowl. Set aside.

  2. Using a stand mixer or hand mixer, cream the butter until it becomes light and fluffy – about two minutes.

  3. Add the sugar to the creamed butter and mix until combined.

  4. Mix in one egg until incorporated into the dough.

  5. Pour in dark molasses and mix until thoroughly combined.

  6. Stir in the dry ingredients mixture gradually until fully blended in.

  7. Fold in restrained blackstrap molasses for extra rich flavor.

  8. Refrigerate for at least one hour before continuing with the rest of the recipe.

Forming Dough Balls

To form dough balls:

  1. Mix sugar coating separately from rest of mixture by combining crystallized sugar with some granulated sugar for an extra sweet texture.

  2. Using a cookie scoop or spoons, form balls of dough that are roughly one inch in diameter.

  3. Roll each ball evenly in the sugar coating mixture until all sides are completely coated.

  4. Place each ball of dough two inches apart on a parchment paper-lined baking sheet.

  5. Press down on each cookie slightly to flatten out the center as it will spread out while baking to give space for uniform moisture distribution throughout each cookie.

Bake Cookies

Finally, let’s bake those molasses fans to perfection:

  1. Bake cookies for eight – ten minutes or until edges start to brown up nicely.

Now, let’s talk about how to make these crystallized ginger cookies in advance and keep them fresh for longer.

We all know that cookies are best enjoyed fresh out of the oven while they’re still warm and gooey. However, with this recipe, you can prepare the dough ahead of time and freeze it for up to 3 months or refrigerate it for up to 2 days before rolling it into balls and baking them. This is a great option if you’re planning on hosting a cookie exchange, a holiday party or simply want to whip up some homemade treats without having to bake them all at once.

Once baked, these ginger cookies will last for up to two weeks if stored properly in an airtight container at room temperature. To ensure that they stay fresh, it’s important to wait until the cookies have completely cooled down before storing them. Also, place a slice of bread inside the container with your cookies as it helps retain moisture and keeps the baked goods fresh for longer.

If you want to reheat your pre-baked or leftover cookies, pop them in the oven at 300°F for about 5 minutes. When reheated correctly, these ginger cookies will taste just as good as freshly baked ones.

Pro tip: You can also use these cookies as an ingredient in other desserts like cheesecake crusts, ice cream sandwiches or even crumble them over yogurt for a crunchy topping. The possibilities are endless!

Tips for Perfect Results

Alright, my baking comrades, let’s face it – perfecting the art of baking is no piece of cake. It requires precision, patience, and a willingness to experiment. But fear not, for I’ve got you covered with some top tips to help you get the perfect batch of Moxie’s Crystallized Ginger Cookies every time!

First things first, make sure you use the ingredients listed in the recipe as closely as possible. It may be tempting to switch out an ingredient here or there, but trust me – every single ingredient has a specific function that cannot be easily replicated. Trust in the power of the recipe!

Speaking of ingredients, let me talk about one that can make or break a cookie: butter. Make sure your unsalted butter is at room temperature before creaming it together with your sugar. When the butter and sugar are beaten together properly, they create little pockets of air that will help your cookies rise and become light and fluffy.

Another crucial step is taking the time to properly sift your dry ingredients together before adding them to the wet mixture. This allows everything to be evenly distributed throughout the dough and prevents any unwanted lumps or bumps.

When measuring out your flour, don’t just scoop it out with your measuring cup straight from the bag! This often results in too much flour being packed into the cup, leading to dry and crumbly cookies. Instead, spoon your flour into your measuring cup and level it off with a knife.

Now, let’s talk about everyone’s favorite part – the ginger! Chopped crystallized ginger is an amazing addition to these cookies, providing little bursts of sweet heat in every bite. However, if you prefer less ginger flavor, feel free to chop it up into smaller pieces or even leave it out altogether.

Lastly, be patient when letting your cookies cool on the baking sheet before transferring them over to a wire rack. This allows them to set and firm up without becoming too crispy or falling apart.

By following these tips and tricks, you’re sure to impress all of your guests with a delicious batch of Moxie’s Crystallized Ginger Cookies. Happy baking!

Moxie’s Crystallized Ginger Cookies Recipe

This was originally posted by my cyber-friend Moxie; I was lucky enough to rescue it during an 'adoption' drive. My suggestion for candied ginger is Evelyn/Athens' #140699 -- absolutely delicious and worthy of a wonderful cookie like this one. Moxie's original intro read: "Candied ginger is one of my favorite things. Before you buy it on the spice aisle, look in the Asian foods section of your supermarket. Usually it is sold in bags there, and is much less expensive. This cookie recipe came from the back of one of those bags of candied ginger -- but I added the sesame oil because I think the nuttiness of it is such a nice complement to the ginger. Prep time includes an hour for the dough to chill."
