Ingredients

Crust

  • 12 -14 crumbled graham cracker squares
  • 1/4 cup melted butter

Cheesecake

  • 12 ounces cream cheese
  • 2 eggs, beaten
  • 1/4 cup sugar
  • 2 teaspoons vanilla
  • 1 teaspoon lemon juice
  • 1 teaspoon grated lemon rind

Topping

  • 1 cup sour cream
  • 3 1/2 tablespoons sugar
  • 1 teaspoon vanilla

Instructions

  • For crust:
  • Mix graham cracker crumbs and butter, pat into 9 inch pie pan and chill or freeze til firm.
  • For cheesecake:.
  • Preheat oven to 325°F.
  • Combine cheesecake ingredients; beat until light.
  • Pour into graham cracker crust.
  • Bake 25-30 minutes, remove from oven, cool 5 minutes. Do not turn off oven heat.
  • Topping:.
  • Blend topping ingredients, pour over pie.
  • Bake 10 more minutes.
  • Remove from oven.
  • Chill 5 hours or longer.
