Ingredients

  • 2 cups finely cut rhubarb
  • 1 1/2 cups brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 teaspoon vanilla
  • 1 cup sour milk (add 1 Tbs vinegar to milk)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  • Mix first 8 ingredients together in a bowl.
  • Dump into a greased 9x13 pan.
  • Sprinkle on the 1/4 c brown sugar and then the cinnamon.
  • Bake at 350 30-40 minutes or until cake springs back when touched.
  • Serve warm.
